Half the city is mountains and rivers, half is noodles; a tradition passed down from the Song Dynasty for eight hundred years.

Xiaomian originated at the end of the Song Dynasty. When the Mongol emperor Möngke Khan led his troops south, attacking the Diaoyucheng in Hechuan for 32 years, the troops from the vast desert could not endure the long-term damp and rainy weather of Ba State. Möngke Khan ordered the addition of chili peppers, scallions, ginger, garlic, peanuts, sesame, and pickled vegetables to Xiaomian. Later, people added the unique Sichuan peppercorn from the Sichuan-Shaanxi-Chongqing region, greatly increasing its effect of dispelling cold and dampness. The Xiaomian became fragrant and delicious. The war has long since passed, but the delicious Song Dynasty Xiaomian remains in Chongqing.
Again, when faced with foreign invasion, the Nationalist government moved west, and the wartime capital Chongqing became a gathering place for the country's elite, literati, artists, and spies. Everyone loved Song Dynasty Xiaomian. Many food enthusiasts innovated and improved upon it, making it even more fulfilling: various toppings such as minced meat sauce, stewed chicken, beef, and large intestine were added to the noodles. A bowl of Song Xiaomian, with its oily red, yellow, and green colors, and its spicy, fresh, fragrant, and smooth taste, flourished everywhere in Chongqing, from the banks of the Yangtze and Jialing Rivers to the streets and alleys, and even the mountains and countryside. People competed to eat it.

Chongqing has a population of 30 million, and few people don't eat Xiaomian. After hundreds of years of inheritance, Song Dynasty Xiaomian has become integrated with the mountains and rivers of Chongqing. Xiaomian is now a custom and part of the culture of Chongqing, permeating the blood of Chongqing people. After a day's separation, one looks back and misses it; after three days without it, one thinks about it day and night. A bowl of spicy Xiaomian is full of affection and has a lingering aftertaste, making people eat it heartily and happily. When remembering Chongqing, one most remembers Chongqing Song Xiaomian. It has both the majestic spirit of the Southern Song heroes and the continuous flow of the Yangtze and Jialing Rivers. Tianshi Song Xiaomian, located at No. 20 Wenquan Road, Bishan District, Chongqing, is a Xiaomian brand created by Chongqing Tianshi Hot Spring Group based on the history of the Southern Song Dynasty's resistance against the Mongols. From the Bayu Tea House in Jiefangbei, the Fotu Guan Douhua Village Restaurant, and the Xin'an Grand Hotel in Yuzhong District in the 1980s, to today's Tianshi Song Xiaomian, food lovers will drive there even late at night to enjoy a delicious meal.
